In Portofino, last year, a random laneway lead to a tiny bakery where we stumbled across Pignoli.

These pine nut and honey tarts have a clean, sweet taste, and are perfect with afternoon tea.

Having stumbled across pinenuts on sale whilst shopping for Easter Sunday lunch, I knew I wanted to replicate this recipe.

Turning to Google, this article from Phoodie lead me to the recipe I ultimately used.

But, going through the photographs of the recipe gave me pause, initially.

All looking good – the honey and sugar melting down.

Time to add the butter.

So that’s why it tastes so good.

The end result is worth it – in small slices.
